Dark Chocolate Chia Pudding

1 14 ounce coconut milk
2 oz dark chocolate (at least 80%), chopped
1 T. cacao
Pinch sea salt
5-6 T. whole chia seeds
2 tsp. vanilla extract


1. In a saucepan over medium heat, combine coconut milk, chopped dark chocolate, cacao and salt.

2. Warm the milk until it just starts to simmer and add the chocolate. Keep stirring until chocolate is completely melted.

3. Turn off the heat and stir in the chia seeds and vanilla, stirring constantly.

4. Pour the pudding into small servings cups and refrigerate for at least an hour.

Bring out before event and enjoy!
